My favorite dinner ever

Thank goodness I had everything that I needed to make this tonight, seeing as I didn't get home from work until 8
And was starving due to my non-existent lunch break! This is my favorite meal to make (and eat) because it tastes gourmet, but takes next to no time to make.

Barbecue chicken pizza

Pizza crust
1pkt fast rise yeast
1 1/2 c hot water
3c flour
1tsp salt
1/6c EVOO
1/6c vegetable oil

Pour the packet of yeast over the water and set aside.in the bowl of a stand mixer, combine salt and flour, drizzle in oil mixture and mix until well incorporated. Stir yeast into water and mix into flour/oil mixture until a dough forms. Place dough into clean, oiled bowl, cover and set in warm place to rise for 1 hour. This recipe makes 2 pizza crusts, one can be frozen before baking (which is AMAZING because you'll almost always have a homemade pizza crust in hand).

Toppings
1 boneless skinless chicken breast
1 bag mozzarella or Italian blend shredded cheese
1/4c diced onion
1/4c tomato sauce
1/4c BBQ sauce

Dice the chicken breast and sauté in 2 tablespoons if the BBQ sauce, set aside. Mix the remaining BBQ sauce and the tomato sauce and spread mixture on pizza crust. Cover sauce with cheese and sprinkle with onions. Top with cooked chicken and drizzle with additional BBQ sauce if desired. Bake for 15 minutes at 450F! Yum!
